BLACK RICE AND EDEMAME SALAD, good with a smoked mackerel fillet

This is the perfect antidote to Christmas.

Finely chop cucumber and spring onions. Make a dressing with honey, lots of wasabi, lemon juice, fish sauce, soy sauce and cooking wine.

Boil chinese black rice and also a good handful of edemame beans. Pod these.


  1. I have never heard of black rice! How peculiar! But that dressing sounds scrum and it sure sounds healthy! Hmmm!

  2. 1 cup red, black, mahogany, or wild rice (or any combo of those types of rices)
    2 cups vegetable broth
    2 cups shelled edamame (thawed frozen or blanched fresh)
    2 scallions, sliced
    1/2 red, orange, or yellow bell pepper, chopped
    2 tbsp extra virgin olive oil
    4 tbsp red wine vinegar
    1 tbsp unbleached organic cane sugar
    salt and pepper, to taste
